Superstar Recipe: Matcha Vegan Ice Cream
Green never looked so yummy! Look no further, because this creamy Superstar Matcha Vegan Ice Cream is the perfect treat any day of the week.
Yields: 2 cups of ice cream
Serves: 4; Serving size: ½ cup
Ingredients
Ice Cream:
1 13.5-fluid ounce can of full-fat coconut milk
¾ cup almond milk
2 Tbsp maple syrup
2 tsp matcha powder
2 tsp MIJA Superstar
1 tsp vanilla extract
⅛ tsp salt
Toppings:
1 Tbsp cacao nibs

Ice cream maker

Directions
Pre-chill the ice cream bowl in your freezer the night before. In a blender, combine the full-fat coconut milk, almond milk, maple syrup, matcha, and Superstar powder. Let chill for a couple of hours. Pour mixture into pre-chilled ice cream maker and churn according to manufacturer’s instructions (Mine took 15-20 minutes.). Serve immediately or pour the “batter” into a freezer-safe container and freeze. Although it will keep for up to 1 week, it is best served immediately. Top with cacao nibs.
